A couple of weeks ago, I made this simple roasted kale, red pepper, sweet potato and quinoa bowl for dinner. I was trying to use up a bunch of veggies and ended up making kale chips and roasting the remaining veggies before tossing them with quinoa. It was surprisingly tasty as I roasted the veggies with olive oil, salt, and pepper, so there was plenty of flavor when all mixed together. You could easily add chicken or salmon to this for some protein.
