Rack of lamb on the Traeger

As you can probably tell, we really love using our Traeger and have made all kinds of stuff. I've now included a section for just Traeger recipes in our list of recipes. We've really enjoyed experimenting and trying new recipes, so we decided to try a rack of lamb recipe. Lamb is one of my favorite dishes to order out since I make it very infrequently (although one of my favorite recipes is the pistachio crusted lamb!) Tyler bought some seasoning at our local butcher and followed the cooking instructions in our Traeger cookbook. I can't seem to find the exact recipe from our cookbook that has the mint jelly, but when I get back up to Maine, I'll update this recipe. The rack of lamb was phenomenal with the mint jelly and added the perfect sweetest to the meat....We all wished we had bought 2x the meat! We served the rack of lamb with a fresh corn, tomato, and avocado salad with a light dressing and had lots of grilled veggies that Tyler cooked on the grill.
