Pork Tenderloin with Mixed Berry Chutney


OMG....this was soooooo delicious and is my new favorite pork tenderloin recipe. The mixed berry chutney was the perfect compliment and super easy to make. Definitely give this recipe a try; you won't be disappointed!

Ingredients
  • 1 1/3 lb. pork tenderloin sliced into 1 inch round pieces 
  • 3 tablespoons of butter
  • 1/4 cup of apple cider vinegar
  • 1 1/2 cups of frozen mixed berries (my combo was raspberry, blueberry, and blackberry)
  • 1/4 cup brown sugar
  • 3 large shallots (thinly sliced and broken up)
  • Salt and pepper to taste
Directions
  1.  In a frying pan on medium heat, melt 1 tablespoon of butter. Add shallots and cook until tender and caramelized (between 8-10 minutes). 
  2. Once tender, add apple cider vinegar, mixed berries, and brown sugar. Cook for about 12-15 minutes until the berries burst and the liquid becomes syrupy. Stir occasionally.
  3. In a large frying pan, melt the remaining 2 tablespoons of butter. Place the pork in the frying pan and sprinkle with salt and pepper. Cook each side for about 10 minutes. When you flip the pork, be sure to season the other side with salt and pepper.
  4. To serve, place the pieces of pork on a plate and spoon the chutney on top of the pork. Enjoy!
