Here's another great week-night dinner we made this week. It's super easy, only requires one pan, and cooks in less than 30 minutes! Can you ask for anything else????

- 2 tablespoons of olive oil
- 2 medium zucchinis chopped into small pieces (think mini moons)
- 1 medium, yellow squash chopped into small pieces (think mini moons)
- 4 cloves of garlic chopped into thin slices
- 1 lb flank steak cut into 3-4 pieces
- 1/2 cup balsamic vinegar
- Salt and pepper to taste + 1/2 teaspoon of salt and 1 teaspoon of pepper
- In a large frying pan, heat 1 tablespoon of olive oil on medium heat. Add the zucchini, squash, and garlic and season with salt and pepper. Cook veggies for approximately 6-7 minutes or until lightly browned and soft. Transfer veggies to a small bowl and place aside.
- Add the remaining olive oil to the pan. Season steak with salt and pepper before placing the pieces in the frying pan. Cook the steak for about 5-6 minutes per side (medium-high heat). Once cooked, transfer steak to a plate and cover with foil.
- Add 1/2 cup of balsamic vinegar and 1/2 teaspoon of salt and 1 teaspoon of pepper to the pan. Cook the balsamic vinegar until it's reduced by half (stirring constantly).
- Slice the steak and pour balsamic glaze over steak to serve.
