Balsamic Glazed Flank Steak with Garlic Zucchini and Squash

Here's another great week-night dinner we made this week. It's super easy, only requires one pan, and cooks in less than 30 minutes! Can you ask for anything else????

Ingredients (serves 2-3)
  • 2 tablespoons of olive oil
  • 2 medium zucchinis chopped into small pieces (think mini moons)
  • 1 medium, yellow squash chopped into small pieces (think mini moons)
  • 4 cloves of garlic chopped into thin slices
  • 1 lb flank steak cut into 3-4 pieces
  • 1/2 cup balsamic vinegar
  • Salt and pepper to taste + 1/2 teaspoon of salt and 1 teaspoon of pepper
Directions
  1. In a large frying pan, heat 1 tablespoon of olive oil on medium heat. Add the zucchini, squash, and garlic and season with salt and pepper. Cook veggies for approximately 6-7 minutes or until lightly browned and soft. Transfer veggies to a small bowl and place aside.
  2. Add the remaining olive oil to the pan. Season steak with salt and pepper before placing the pieces in the frying pan. Cook the steak for about 5-6 minutes per side (medium-high heat). Once cooked, transfer steak to a plate and cover with foil.
  3. Add 1/2 cup of balsamic vinegar and 1/2 teaspoon of salt and 1 teaspoon of pepper to the pan. Cook the balsamic vinegar until it's reduced by half (stirring constantly). 
  4. Slice the steak and pour balsamic glaze over steak to serve.
