Chicken pesto with cream cheese

I've been using pesto a lot more in recipes beyond pasta (cue pesto quinoa) and made this really easy pesto chicken dish with cream cheese. It was so simple and quite delicious - a great weekday meal option.

Ingredients

  • 2 lbs. chicken breasts - I sliced mine in half so they would cook more evenly
  • 1/3 cup of pesto
  • 8 ounces cream cheese softened
  • 1/2 cup of mozzarella (The recipe called for 1 cup, which seemed like a lot. I ended up just sprinkling some on top of the chicken breasts.)

Directions

  1. Preheat the oven to 375˚F.
  2. Mix softened cream cheese and pesto together until combined. 
  3. Spread pesto mixture evenly over the chicken breasts and sprinkle the mozzarella over the top.
  4. Bake for 35-40 minutes or until the chicken is cooked through (internal temperature of 165˚F.)
