I was looking for an easy side dish to go with dinner one night and had a bunch of pesto and mozzarella cheese from Raffetto's. So, I decided to cook some quinoa, slice up the mozzarella cheese and grape tomatoes and stir in 1/3 of a cup of pesto. This was seriously delicious and so easy to make...especially if you get pre-made frozen quinoa from Whole Foods :)
