Smoothies Galore and Lebanese Stuffed Zucchini

I was on a work trip this week and got back super late Thursday night. We were planning on having a quite night Friday night but ended up grabbing pizza at home and then headed out with friends to the Comedy Cellar. We saw a great lineup of comedians and will definitely be going back!

On Saturday, we woke up early and headed to workout classes before heading up to 117th Street to run errands at Costco and Target. We both LOVE Costco and stocked up on all kinds of goodies including lots of fruits and veggies to make smoothies. I chopped everything up to make a variety of smoothies with bananas, strawberries, raspberries, blueberries, and pineapple. I spent the rest of the afternoon prepping for the Easter brunch we're hosting (another post to come!).
For dinner, I made Lebanese stuffed zucchini from Epicurious. Growing up, we ate stuffed zucchini prepared by our babysitter who was Lebanese and I have such fond memories of this dish. This recipe was good, but I'm going to try and tweak a few things to see if I can get it closer to what I remember as a kid :)
