Apricot Preserve Pork Loin
Ingredients
- 1.5 lb. pork loin
- 1 jar of apricot preserve
- 1 teaspoon garlic poweder
- 1 tablespoon honey
- 1/2 teaspoon thyme
- Salt and pepper
- Preheat oven to 400 degrees.
- Sprinkle salt and pepper over pork loin. Place pork loin in oven.
- Mix remaining ingredients together. After 15 minutes, remove pork loin from oven and place two spoonfuls of apricot mixture over pork loin. Place pork loin back in oven for another 15 minutes. Repeat steps twice (pork loin should cook about 45 minutes).
- Remove pork loin from oven and let sit for 5 minutes. Slice pork loin and place four spoonfuls of apricot mixture.
