Greek Salad with Homemade Croutons
Ingredients
- 2/3 cucumber chopped into quarters
- 2 tomatoes chopped
- 1/3 red onion cut into slivers
- 1/4 loaf of French bread cut into bit size pieces;
- 1 tablespoon Girad's Champagne Dressing
- 2 tablespoons crumbled feta cheese
- Salt and pepper to taste
- Preheat oven to broil.
- Drizzle bread with olive oil and broil for 8 mins (or until golden brown and crispy, like a crouton!).
- Mix all ingredients together and serve!
Ingredients
- 3 oz. crumbled goat cheese
- 1 yellow pepper
- 5 large carrots peeled and sliced in half
- 1 orange sliced into pieces
- Salt and pepper to taste
- Preheat oven to broil. I blanched the pepper and carrots in boiling water to soften them.
- Slice pepper into fourths. Drizzle pepper and carrots with olive oil and sprinkle with salt and pepper. Broil veggies for about 10 minutes. Remove veggies from oven and let cool.
- On the serving plate, assemble pepper, carrot, 3 slices of orange, and goat cheese.
