Delicious Side Salads

The other night, I was trying to clean out our fridge and decided to make two different side salads for dinner. They were each very different, delicious, and quick!
Greek Salad with Homemade Croutons

Ingredients
  • 2/3 cucumber chopped into quarters
  • 2 tomatoes chopped
  • 1/3 red onion cut into slivers
  • 1/4 loaf of French bread cut into bit size pieces;
  • 1 tablespoon Girad's Champagne Dressing
  • 2 tablespoons crumbled feta cheese
  • Salt and pepper to taste
Directions
  1. Preheat oven to broil.
  2. Drizzle bread with olive oil and broil for 8 mins (or until golden brown and crispy, like a crouton!).
  3. Mix all ingredients together and serve!
Roasted Yellow Pepper, Carrots, with Orange Slices and Goat Cheese

Ingredients
  • 3 oz. crumbled goat cheese
  • 1 yellow pepper
  • 5 large carrots peeled and sliced in half
  • 1 orange sliced into pieces
  • Salt and pepper to taste
Directions
  1.  Preheat oven to broil. I blanched the pepper and carrots in boiling water to soften them.
  2. Slice pepper into fourths. Drizzle pepper and carrots with olive oil and sprinkle with salt and pepper. Broil veggies for about 10 minutes. Remove veggies from oven and let cool.
  3. On the serving plate, assemble pepper, carrot, 3 slices of orange, and goat cheese.
