By Friday night, we were exhausted but wanted a home cook meal. We stocked up our kitchen with our Target and grocery store run, so I decided to make us a home cooked meal using some of our wedding presents. Here was the menu:
- Panko Parmesan Chicken
- Summer Salad
- White Rice (Tyler's staple)
The only thing that really had a recipe was the Panko Parmesan Chicken, which is one of our staple recipes, which Tyler LOVES. For any of you interested in making it, here's the recipe:
- 6 skinless boneless chicken breasts pounded out slightly
- 3 eggs
- 3 tablespoons honey dijon mustard
- 2 cups of panko (You can find Panko in your local supermarket in the Asian food section)
- 1 1/2 cups grated Parmesan cheese
- 1 1/2 teaspoons of salt
- 1 teaspoon of ground pepper
- 5 tablespoons of butter
- Preheat the oven to 500 degrees
- Butter a large baking sheet with 2 tablespoons of butter (you can also use cooking spray)
- Whisk eggs and mustard in a bowl and set aside
- Mix panko, Parmesan cheese, salt, and pepper in another bowl
- Dip the chicken into the egg mixture and then the panko mixture coating the chicken generously. You may have to use your hands to really coat the chicken breast.
- Place the chicken in the baking dish
- Melt the remaining 4 tablespoons of butter in a small sauce pan. Once the butter is melted, drizzle it over the chicken breasts.
- Bake until brown (approximately 10 minutes). You should flip the chicken breasts once. (I sometimes drizzle a little more butter once I flip the breasts...you don't have to though.)
