I always look forward to cooking during 4th of July week and usually spend time meal prepping and finding new recipes to try. This year, I was all about good meals but SIMPLE. With three little babes, I didn't have the luxury of cookie for a few hours, so I tried to stick to easy but tasty meals. Here was our line up for meals:
- Tuesday: pulled pork sandwiches, snap peas burrata (see recipe below), brown sugar roasted carrots, and an arugula salad with watermelon, feta cheese, and mint from my garden!
These char-grilled snap peas over burrata were SO GOOD. We had a few people who normally don't like snap peas and thought this dish was great! I tossed the snap peas with olive oil, salt, and pepper and then broiled them in the oven for about 7 minutes. On a platter, I butterflied the burrata and then placed the snap peas on top.
- Wednesday: Turkey tacos, black beans, and veggies
- Thursday: Burgers and sausage with pesto smashed potatoes, corn and avocado salad, and strawberry shortcake
- Friday: Dinner out at Flatbread Pizza

- Saturday: Lobstah dinner with clam chowder, steamers, salad, and hot dogs
- Sunday: Quartered chicken on the traeger with veggies and a salad and banana pudding for dessert
