I knew we'd have a lot of leftover ham from Easter and I hate wasting it. So this year, I was prepared to make delicious croque monsieur sandwiches on mini croissants. They were heavenly and such a great way to use up the ham. All you do is preheat the oven to 375 and cut the croissants in half. I spread a little honey mustard on one side, added a few slices of gruyere cheese and ham, and then baked the sandwich for about 10-12 minutes. Easiest and most delicious sandwich!
