On my Thursday to-do list after grocery shopping, was prepping breakfast burritos that I could freeze so we have something hearty and tasty for breakfast that doesn't require any prep when we get home from the hospital. I made 8 burritos and made a batch of scrambled eggs, cooked chicken maple breakfast sausages, and cooked roasted corn and peppers. To assemble, I laid out whole wheat tortillas, spread a little salsa and sour cream and then piled them up with all of the fixings including cheese. I wrapped the burritos tightly in foil and then placed them all in a gallon size freezer bag. To eat, I plan on heating them up in the oven...hopefully they taste good!
