Delicious meal at home

As I mentioned in the previous post, we've been laying low and trying to recuperate. Our weekly Saturday sitter also isn't back to school yet, so we haven't had our normal date nights. So last night, I decided to make a nicer meal that we could enjoy at home. I bought rib eye steaks and made asiago onions and roasted zucchini. The onions were out of this world and definitely will be something that I add to my menus when we host dinner; they're really easy to make, taste delicious, and looks fancy.


Asiago Roasted Onions

Ingredients
  • 2 large yellow onions
  • 1 cup heavy cream
  • 3/4 cup asiago cheese
  • Herbs de provence
  • Olive oil
  • Salt and pepper to taste
Directions
  • Preheat oven to 450 degrees and line a baking sheet with foil and spray with nonstick cooking spray.
  • Slice the onions into 1/4 inch thick pieces and lay on the baking sheet. Drizzle with olive oil and sprinkle with the herbs de provence.
  • Cook the onions for 15 minutes. 
  • While the onions are cooking, get a large baking dish and spray with a nonstick cooking spray. In a small pot, pout in the heavy cream and 1/2 cup of asiago cheese. Cook on medium heat and stir allowing the cream to bubble up.
  • Take the onions out of the oven and place them in the baking dish. Pour the cream over the onions and sprinkle the remaining asiago cheese on top. Cover the baking dish with foil and bake for another 20 minutes.
