Sausage kale leek cavatelli with a butter and white wine sauce

I made this really good pasta dish tonight for dinner and it might my new fav! The recipe is for two people.

  • 1 lb. ground sweet Italian sausage 
  • 1/2 bag of Trader Joe's kale
  • 3 leeks sliced
  • 2/3 cup white wine
  • 3 tablespoons butter
  • 1/4 cup grated parmesan cheese
  • 1/4 cup water from the pasta
  • 1/2 lb. cavatelli
  1. Boil water in a medium sized pot and cook pasta according to the directions on the package. We use fresh pasta so it only takes 2-3 minutes.
  2. In a large frying pan, cook the sausage breaking it up with a spatula. 
  3. Add 3 tablespoons of butter and add the leeks and kale mixing everything together.
  4. Once the kale and leeks have cooked, add the white wine and stir everything until most of the wine has evaporated.
  5. Add 1/4 cup of the water from the pasta to the sausage mixture and add the parmesan cheese. Once everything is mixed, at the pasta to the pan and stir thoroughly.
