Orzo with peas, proscuitto and a creamy parmesan sauce

As you might already know, this is a favorite dish in our household. It made it's first appearance back in 2011 and has managed to stick around; however, as I've made this recipe more and more, I've tweaked it. Instead of bacon, I make this dish with prosciutto, which is not only tastier but it's even easier to make (if that's possible!). Here's my tweaked version of our favorite recipe:

Ingredients
  • 1/2 box of orzo
  • 2/3 cup heavy cream
  • 3/4 of a small bag of frozen peas
  • 1/2 cup grated parmesan cheese, plus more for serving
  • 1 package of diced prosciutto
  • 3/4 tsp salt
  • 1/8 teaspoon fresh ground black pepper

Directions
  1. Cook orzo according to directions on box. With 2 minutes left to go, I add the peas to the pot. Drain both the orzo and peas into a strainer and set aside.
  2. Using the same pot you cooked the orzo in, add the heavy cream, parmesan cheese, and prosciutto. Heat over medium low heat, whisking constantly until Parmesan has melted.
  3. Add the peas and orzo back into the pot with the cream sauce, season with salt and pepper and serve topped with additional parmesan cheese.
