Farro with Prosciutto and Asparagus

This was a super easy, one pot meal and very tasty....Tyler was on a business trip and came home and ate all the leftovers claiming it was "soooooo good!"

  • 1 10 oz. package of farro
  • 1 bunch of asparagus chopped into 1 inch pieces
  • 1 5 oz. package of diced proscuitto
  • 3/4 cup of heavy cream
  • 1/2 cup shredded Asiago and Parmesan cheese blend
  1. In a pot of boiling water, cook farro for 12 minutes. At about 6 minutes in, drop the pieces of asparagus into the bot. Once cooked, drain the farro and asparagus.
  2. In the same pot on medium heat, mix together the cream, shredded cheese, and proscuitto stirring until the cheese melts and blends with the cream. 
  3. Pour the farro and asparagus into the pot with the cream mixture and stir until the farro is covered.
