It seems as though I'm hooked on anything caprese and have been making a lot of similar dishes lately. This meal was no exception :) It's really easy and quite tasty!
Caprese Chicken with Roasted Artichokes
Ingredients - I adapted the recipe from here, but this makes enough for 4 people easily.
- 1 cup of fresh basil
- 4 cloves of garlic
- 1/4 cup of olive oil
- 1/2 box of grape tomatoes sliced
- 1/2 medium ball of mozzarella cheese, sliced
- 3 large chicken breasts
- 2 artichokes, halved
- 1/3 cup romano cheese
- 1 tablespoon of olive oil
Directions
- Preheat over to 350 degrees. Pound chicken with a mallet to flatten it. Boil a medium pot of water.
- When the water comes to a boil, place the artichokes in the pot. Cook for about 15 minutes.
- In either a blender or a bowl (with an immersion blender - this is what I did as I was too lazy to get the blender out), add basil, garlic, and olive oil. Puree the mixture.
- Place the slice mozzarella on chicken breasts (about 3-4 pieces)
- Pour the basil mixture over the chicken/mozzarella. Cover each breast with a handful of sliced tomatoes.
- Place the artichokes (hearts up) on a pan. Drizzle with olive oil and cheese.
- Bake chicken for about 20-25 minutes. At the 10 minute mark, add the artichokes and bake until cheese is melted.
