Happy Easter!!! We had a really nice, low key, and impromptu brunch with family and friends today. We both have been traveling a lot and just wanted to be home and relax this weekend. Yesterday evening, we decided to invite people over brunch and have a lazy Sunday. I didn't know what we were eating until 10am, headed out grocery shopping, purchased some peeps and flowers, and came home to make brunch before everyone arrived at 1pm. I'm a little biased, but thought my centerpiece came out really cute with a peep-lined vase with daffodils and tulips :) Just like I do at my mom's house for Easter, I folded our napkins into little bunnies for a festive touch. And now for the menu:
Main Course: Sausage, Spinach, and Onion Strata
Side: Fruit Salad
Side: Brown Sugar Glazed Bacon
Ingredients
- 2 packages of bacon
- 3/4 cup brown sugar
- 1/4 teaspoon pepper
- 1/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
Directions
- Preheat oven to 350 degrees. Line baking pans with aluminum foil.
- Place bacon on a single layer on the baking pans. Mix remaining ingredients in a small bowl. Sprinkle mixture over bacon.
- Bake for 15 minutes. Rotate pans at 15 minutes and cook for another 10 minutes.
Side: Roasted Asparagus and Goat Cheese
Ingredients
- 1 bunch asparagus
- 3 oz crumbled goat cheese
- 1 tablespoon olive oil
- 1 teaspoon balsamic vinegar
- 1/8 cup sliced almonds
Directions
- Preheat oven to 350 degrees.
- Place asparagus on baking sheet and drizzle with olive oil. Bake for 20 minutes or until roasted.
- Place asparagus on serving platter. Sprinkle goat cheese and almonds on top. Drizzle with balsamic vinegar before serving
It wouldn't be Easter without reminiscing our Easter party in SF a few years back....Gotta love the bunny costumes!
