Miss Me?!

It feels like it's been forever since I posted anything....I flew to Vegas last week for our global sales conference (see the picture above of my colleagues and me), which was awesome. It was so much fun getting to meet with everyone in person and the speakers/presentations were really fantastic! I spent the weekend recuperating, hanging out at home and coming up with two new recipes  :) 
Stuffed Salmon with Roasted Peppers, Feta, and Spinach (for 2 people)

Ingredients
  • 1 lb. salmon
  • 1/4 cup crumbled feta cheese
  • 1/2 jar Trader Joe's roasted red peppers
  • 1 cup of fresh spinach
  • 1 tablespoon of olive oil
Directions
  1. Preheat oven to 400 degrees and slice the salmon in the half (not all the way through).
  2. Stuff the salmon with peppers, feta, and spinach. Drizzle olive oil over salmon.
  3. Bake for 15-20 minutes or until salmon is flaky. 

Mediterranean Couscous

Ingredients
  • 1/2 box cooked Israeli couscous
  • 1/2 cucumber
  • 1 red pepper chopped
  • 1/4 cup crumbled feta
  • 1 tablespoon balsamic vinaigrette
Directions
  1. Mix all ingredients together.
