Here's a great week night dinner that is on the healthier side and quite tasty if I do say so myself :)
Ingredients
- 1/2 teaspoon oregano
- 1/2 teaspoon basil
- 1/2 teaspoon parsley
- 1 teaspoon lemon zest
- 3 cloves of garlic
- 1 tablespoon olive oil
- 8 mini bell peppers
- 1 lb. ground turkey meat
- 1/2 cup parmesan cheese
- 1 cup of rice (cook with 2 cups water according to packaged directions)
- 1/4 cup crushed tomatoes
- 1/4 cup of mozzarella cheese
- Preheat oven to 400 degrees. In a medium size pot, boil water. In a smaller pot, cook the rice.
- Slice the mini peppers in half and scoop out the inside of the peppers. Place peppers in boiling water and cook for about 5-7 minutes or until soft. Drain the peppers and let cool.
- In a medium non-stick frying pan, pour olive oil and begin to brown turkey. After 5 minutes, mix in all seasoning, garlic, and lemon zest. Once meat is cooked, set aside.
- Mix cooked rice, cooked turkey, crushed tomatoes, and parmesan cheese in frying pan and mix until combined.
- Stuff the peppers and place them skin side down. Sprinkle with mozzarella cheese and bake for about 7 minutes or until cheese is melted.
