Whole Wheat Pasta with Roasted Veggies and Cream Sauce


This dish takes less than 30 minutes to cook and is quite tasty! You can add all sorts of different spices or veggies...and don't have to worry about making any sides as the dish is quite filling :)

Ingredients
  • 3/4 box whole wheat pasta (I wanted leftovers)
  • 1 red pepper
  • 1 medium yellow squash
  • 1 medium zucchini
  • 1/2 cup parmesan cheese
  • 1 cup heavy cream
  • Drizzle of olive oil 
  • Sprinkle of thyme
  • Salt and Pepper
Directions
  1. Preheat oven to Broil and boil a medium size pot of water. Once water is boiling, cook pasta until al dente.
  2. Cut veggies up into small pieces on a baking sheet. Drizzle olive oil over veggies and sprinkle them with salt, pepper, and thyme. Broil for about 15-20 minutes.
  3. Drain pasta and place pasta back in pot. Mix in heavy cream and parmesan cheese. When veggies are cooked, mix them into the pasta dish. Serve warm and enjoy!
