Mango Salsa

It was 97 degrees today in NYC and the thought of cooking dinner when I got home at 8:30pm from work wasn't that appealing! On my way home, I picked up grilled chicken from our local market and figured I would just make a quick salad. I opened our veggie drawer and remembered I had a fresh mango, which sounded delicious. So, I decided to improvise and make a mango salsa topping for our chicken. It literally took 5 minutes and was so good! I will be putting mango salsa on everything :)
Mango Salsa
  • 1/4 of a medium red onion (diced)
  • 1/3 diced cucumber
  • 1/2 lime
  • 1 mango
  • Cilantro (I sprinkled just a little since I don't like a lot)
  • Salt and Pepper to taste
  1. Cut up all fruits and veggies and place in bowl.
  2. Squeeze half a lime over  salsa and sprinkle with salt and pepper before serving.
