Game Day Food

As I mentioned in our weekend recap, Tyler and I made a great game day dinner. The meal consisted of baked brie with honey apple butter to start, crockpot chicken tacos with all of the fixings for a main course, and then the most sinful dessert - chocolate chip n'Oreo brownie with vanilla ice cream. Everything came out great, but the real hit was the dessert. We definitely recommend making the dessert :)


Appetizer: Baked Brie with Honey Apple Butter

Ingredients:
  • Large piece of brie
  • Honey Apple Butter from Trader Joe's
Directions:
  1. Preheat oven to 350 degrees.
  2. Place brie in an oven proof dish. Bake for 5-10 minutes or until brie is nice and soft. Make sure you keep an eye on the brie so it doesn't melt.
  3. Pour Honey Apple Butter over brie (3 tablespoons). Serve with crackers.
Main Course: Crockpot Chicken Tacos with Fixings
(Recipe Adapted)

Ingredients:
  • Crockpot Chicken
    • 4 boneless skinless chicken breasts
    • 1 can diced tomatoes with green chilies
    • 1 cup corn
    • 1 can of black beans (partially drained)
    • 1 packed taco seasoning
  • Fixings:
    • Tortillas or taco shells
    • Sour cream
    • Shredded cheddar cheese
    • Salsa
    • Diced fresh tomatoes
    • Lettuce
    • Avocados
    • Refried/black beans
Directions:
  1. In the crockpot, place the chicken breasts in the pot. Pour diced tomatoes with chilies over chicken (with juice), corn, and partially drained black beans. (Note: If you would like to make more chicken (I made 7 breasts), I added a second can of tomatoes and chilies,  1 more cup of corn, and a second taco seasoning packet, but didn't add a second can of black beans.)
  2. Cook chicken on low for 6 hours. Once chicken has cooked, shred chicken and mix taco seasoning.
  3. Prepare all fixings as you wish :)
Sinful Dessert: Chocolate Chip n'Oreo Brownie with Vanilla Ice Cream

Ingredients:
  • 1 cup (2 sticks) butter, softened
  • 1 cup granulated sugar
  • 3/4 cup light brown sugar
  • 2 large eggs
  • 1 Tablespoon pure vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups (12 ounces) milk chocolate chips
  • 1 pkg Double Stuffed Oreos
  • 1 Box Brownie mix
Directions:
  1. Preheat oven to 350 degrees F. 
  2. Make the chocolate chip cookie batter: (Note: I used my own chocolate chip cookie recipe.)
    1. Cream the butter and both sugars in a large bowl with an electric mixer on medium speed for 3-5 minutes. 
    2. Add the eggs and vanilla and mix well to thoroughly combine. 
    3. In a separate bowl, whisk together the flour, baking soda and salt, then slowly incorporate into the mixer until the flour is just combined. 
    4. Stir in chocolate chips.
  3. Spread the cookie dough in the bottom of a 9×13 baking dish that’s been lined with parchment paper and sprayed with cooking spray. 
  4. Top with a layer of Oreos. 
  5. Mix together brownie mix. Pour the brownie batter over the cookie dough and Oreos. 
  6. Cover with foil and bake at 350 degrees F for 30 minutes. Remove foil and continue baking for an additional 15-25 minutes. Brownies are down when a toothpick inserted 2″ from the edge comes out clean or with moist pieces clinging to it. 
  7. Let cool completely before cutting and serving with vanilla ice cream.
