Friday in Tahoe

We all woke up relatively early and spent the morning hanging out and creating a grocery list for the weekend. Before heading into town for lunch and shopping, Michelle, Tyler, Mark, Kristina and I did a short hike up to Angora and along the ridge line of the mountain before heading back down.

After our hike, we came home, quickly changed, and jumped in the car to stock up on food for the weekend. We were all starving and decided to grab lunch at Taco Bell. I had to document Michelle's first visit to Taco Bell!

After grocery shopping, we headed home and started getting ready for dinner and the rest of our friends to arrive. Michelle and I made an easy, healthy meal....We figured we would try and eat healthy at least once night we were up here!

For starters, we made Brie and Apple Tarts, which not only tasted great, but also looked so adorable! Then for dinner, we made my mom's marinated salmon recipe, teriyaki chicken, roasted zucchini, and salad. Here's the recipe for the marinade for the salmon (so tasty!):

Mix the following ingredients in a bowl and then place in a plastic freezer bag:
    1. 2 chopped green onions
    2. 2 cloves of pressed garlic
    3. 2 tablespoons molasses
    4. 1/2 teaspoon liquid smoke
    5. 2 tablespoons brown sugar
    6. 1/4 cup soy sauce
    7. 1/4 cup Worsterchire Sauce
Add 2 good size salmon fillets to the bag.
Place in refrigerator for 2 hours. Rotate bag twice (if possible. I don't always have time to do this.)
Bake salmon at 350 degrees for 15 minutes or until salmon is cooked all the way through.


Here's the first group shot all sitting down to dinner! The dinner came out great and we had few leftovers, which is always nice. For dessert, Michelle and I made Triple Berry Crisp, which lived up to all of the reviews it received on allrecipes.com. Unlike other crisps, this one has two layers of "crisp" with berries in the middle. This recipe is a definite keeper! After dinner, we arranged a beer pong tournament, played Pictionary, and hung out. It was so great getting our friends together. Here are some highlights from the first night :)

This might be my favorite picture of the night. The girls decided to change into PJs to play Pictionary. Matt and Nick were really jealous of our PJs so Michelle graciously offered her two extra pairs of PJs to them. They thought they looked soooo good....check out the poses!
