
Tyler and I have been craving Mexican food, so we decided to try making Goat Cheese Quesadillas. I had found a recipe online and decided to modify it. Here's our recipe for yummy Goat Cheese Quesadillas:
Ingredients:
- Tortillas
- 5-6 oz. of Goat Cheese (I just cut a log of Goat Cheese in half)
- 1 can black beans drained
- 3/4 of can of corn
- 3/4 shallot diced
- Mix goat cheese, black beans, corn, and shallot in a small mixing bowl.
- Heat pan over medium heat and place tortilla in pan.
- Place two scoop fulls of the cheese mixture and fold the tortilla in half.
- Cook quesadilla for approximately 2 minutes on either side or until the tortilla is cooked.
- Cut into wedges and serve it warm.
