Yummy Goat Cheese Quesadillas

Tyler and I have been craving Mexican food, so we decided to try making Goat Cheese Quesadillas. I had found a recipe online and decided to modify it. Here's our recipe for yummy Goat Cheese Quesadillas:

  • Tortillas
  • 5-6 oz. of Goat Cheese (I just cut a log of Goat Cheese in half)
  • 1 can black beans drained
  • 3/4 of can of corn
  • 3/4 shallot diced
  1. Mix goat cheese, black beans, corn, and shallot in a small mixing bowl.
  2. Heat pan over medium heat and place tortilla in pan.
  3. Place two scoop fulls of the cheese mixture and fold the tortilla in half.
  4. Cook quesadilla for approximately 2 minutes on either side or until the tortilla is cooked.
  5. Cut into wedges and serve it warm.
