Weekly Dinner Menu

I know...I'm posting this a bit late in the week :( Between getting home late Sunday night from South Carolina and having an offsite with work this week, it's been a little hectic. The good news is I had already figured out the dinner schedule since I did it at the end of last week. At any rate, here are some tasty recipes to try.

Dinner Suggestion 1:
*Apple Covered Pork Chops (1 can apple pie filling, 1 Box Stovetop Stuffing, 6 (4 oz.) Pork Chops - you can cook fewer pork chops, but will have leftover stuffing and apple pie filling)
  • Grease 13x9 pan and preheat oven to 350 degrees.
  • Cook stuffing according to directions on the box.
  • Sprinkle salt and pepper on pork chops. Brown pork chops in pan on stove.
  • Spread apple filling on bottom of pan. Place pork chops on top of filling.
  • Scoop stuffing and place on top of pork chops.
  • Cover pan with aluminum foil and bake pork chops for 30 minutes. Remove aluminum foil and cook for additional 10 minutes.
*Sauteed Brussel Sprouts
  • Heat frying pan with 1 tablespoon of Olive Oil on medium.
  • Slice brussel sprouts, season with salt and pepper, and place in pan.
  • Cook until brown and soft.
Dinner Selection 2:
*Salmon Marinade Teriyaki Style - My Mom's recipe that is amazing :)
-Mix the following ingredients in a bowl and then place in a plastic freezer bag:
  • 2 chopped green onions
  • 2 cloves of pressed garlic
  • 2 tablespoons molasses
  • 1/2 teaspoon liquid smoke
  • 2 tablespoons brown sugar
  • 1/4 cup soy sauce
  • 1/4 cup Worsterchire Sauce
-Add 2 good size salmon fillets to the bag. Place in refrigerator for 2 hours. Rotate bag twice (if possible. I don't always have time to do this.) Bake salmon at 350 degrees for 15 minutes or until salmon is cooked all the way through.

*Butternut Squash with Brown Butter

Dinner Selection 3:
*Pan seared chicken breasts with olive oil, salt and pepper
*Low-fat Baked Onion Rings - these were amazing...definitely a keeper! (Tip: you might need extra panko and Italian seasoning. I didn't use cornflakes and they came out great!)
