I was looking for a healthy dinner that was super easy to assemble one night when we were in Maine. I had been craving Mediterranean food and thought it might be fun to make bowls filled with chicken, cauliflower rice, spinach, tomatoes, cucumbers, feta, hummus, and taziki. I prepped everything in their own individual bowls and then each person could add whatever ingredients they liked. It was really good and definitely something I'm going to add to our weekly dinners now that I'm back at work.
