Whoopie Pies Nana!

If you know my mother well, you know how much she LOVES whoopie pies. I'm pretty sure she has tried the whoopie pies of every store/bakery in our little town and has an opinion about which ones are good and which ones need more work. My mom has been waiting for the moment for when she and Logan could make their own whoopie pies in the summer and this summer started their annual tradition. This past Christmas, Logan and his sisters got Nana aprons that say, "Nana's little helper," so Nana of course brought them to Maine to make whoopie pies.

The first annual baking session was a huge hit and the whoopie pies came out perfect....Logan was so proud of himself and kept repeating, "whoopie pies with Nana!" Below is the recipe they used.





Ingredients

Devil's Food Pies:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup buttermilk
  • 1/2 cup unsweetened cocoa
  • 6 tablespoons melted butter
  • 1 teaspoon baking soda
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 1 large egg

Creme Filling:

  • 1/2 cup vegetable shortening
  • 1 1/2 cups marshmallow cream
  • 2 cups confectioner's sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 tablespoons milk

Instructions

Devil's Food Dough Recipe
  1. Preheat oven to 350 degrees.
  2. Cream together all ingredients for the Devil's Food dough recipe in a large bowl with an electric mixer. Scoop 1 tablespoon of dough onto an ungreased baking sheet. Space about 2 inches apart to get about 9 tablespoons of dough onto a large baking sheet. Roll the balls between your hands to get very smooth results when baked.
  3. Bake for 10 minutes. Remove from the oven and allow to cool completely.
Creme Filling
  1. While the Devil's Food Dough is baking, prepare the creme filling. Cream together all of the ingredients for the creme filling recipe. Set aside until the Devil's Food portion has completely cooled.
  2. Scoop 1 teaspoon of creme filling and place on top of the flattened side of one Devil's Food cake. Place another Devil's Food cake on top of the creme filling.
  3. Serve at room temperature.
