I was looking for an easy dinner to make that was healthy and didn't require much work. So, I roasted whole sweet potatoes at 400 degrees for 1 hour. While the chicken was cooking, I shredded the rotisserie chicken I had purchased and mixed it with Raffetto's pesto. Once the sweet potatoes were done, I sliced each of them and stuffed them with the chicken. It was such an easy dinner and so delicious....I'll definitely be adding this regularly to our meal plans.
