Shrimp Teriyaki Bowls

Still trying to play catch up here, but wanted to share a really quick and tasty week night dinner we've been loving lately. I bought a huge bag of frozen, peeled, organic shrimp from Whole Foods and thought they'd be good to have on hand for week night dinners. We really like teriyaki bowls, but thought we'd swap out the chicken for shrimp. I make brown rice ahead of time and basically cook whatever veggies I have at the time - in this case it was broccoli, peppers, and onions- and mix them with 1/2 tablespoon of teriyaki sauce. I took the veggies out of the pan and added a bunch of shrimp and mixed with 1/2 tablespoon of teriyaki sauce. The shrimp only takes about 4 minutes to cook, so it's a fast dinner to prepare. When we're ready to eat, I assemble everything in a bowl and drizzle a little extra teriyaki sauce over the top.
