Sweet Potato Lentil Salad

I made this sweet potato lentil salad as a side dish for Easter and was pleasantly surprised by how good it taste. It was super easy to make and hearty - I could imagine this being a good side dish for Thanksgiving as well. 

  • 4 medium sweet potatoes
  • 1 large red onion
  • 1 bunch large peeled carrots
  • 1 cup of cooked green lentils
  • 1/2 bag of fresh spinach
  • 1/2 cup of feta cheese
  • Olive oil
  • Salt and pepper
  1. Preheat the oven to 450 degrees. On a large baking sheet, place all of the veggies on the pan and drizzle olive oil over them. Roast the veggies until they're cooked all the way through.
  2. On a platter, spread out the spinach and then cover with a layer of lentils.
  3. In a large bowl, mix the veggies with the feta cheese and drizzle about 1 tablespoon of olive oil in the bowl and mix until combined. Season with salt and pepper. Place the mix of veggies and cheese on top of the lentils and serve.
