Lemon pasta with garlic chicken and kale

It's Sunday night, which means it's Raffetto's night! I made this super quick pasta dish and it was soooo good.

(serving size 2-3 people)

Ingredients

  • 2/3 lb. fresh fettuccine lemon pasta
  • 2 tablespoons olive oil
  • 3 tablespoons butter
  • 3 minced garlic cloves
  • 1 1/3 lbs. chicken tenders cubed
  • 1 teaspoon Italian seasoning
  • 2 cups fresh kale (I used Trader Joe's organic chopped kale)
  • 1/4 cup pasta water
  • 1/3 cup grated parmesan cheese


Directions
  1. Bring a medium pot of water to a boil.
  2. In a medium frying pan, add the oil. Once heated, add the garlic and gook for about 2 minutes.
  3. Toss the chicken with the Italian seasoning and then add it to the frying pan. Cook the chicken completely and then add the butter. 
  4. Once the butter is melted, add the kale and cook until it's wilted.
  5. Cook the pasta until al dente and save 1/4 cup of pasta water. Pour the pasta water into the pan and add the parmesan cheese. Stir until everything is combined and serve warm.
