It's Sunday night, which means it's Raffetto's night! I made this super quick pasta dish and it was soooo good.

Ingredients
- 2/3 lb. fresh fettuccine lemon pasta
- 2 tablespoons olive oil
- 3 tablespoons butter
- 3 minced garlic cloves
- 1 1/3 lbs. chicken tenders cubed
- 1 teaspoon Italian seasoning
- 2 cups fresh kale (I used Trader Joe's organic chopped kale)
- 1/4 cup pasta water
- 1/3 cup grated parmesan cheese
Directions
- Bring a medium pot of water to a boil.
- In a medium frying pan, add the oil. Once heated, add the garlic and gook for about 2 minutes.
- Toss the chicken with the Italian seasoning and then add it to the frying pan. Cook the chicken completely and then add the butter.
- Once the butter is melted, add the kale and cook until it's wilted.
- Cook the pasta until al dente and save 1/4 cup of pasta water. Pour the pasta water into the pan and add the parmesan cheese. Stir until everything is combined and serve warm.
