Long weekend at home

We enjoyed a really nice weekend at home. With back-to-back work trips and Tyler having to travel this coming week, we decided to stay in the city and enjoy the long weekend. We started the weekend right with pizza and watched the olympics.

On Saturday, Tyler and I each headed to our workout classes and then grabbed a late lunch with a couple of our friends. We spent the afternoon hanging out and all three of us enjoyed long naps before Tyler and I headed out on our weekly date night. We stayed close to home since we had a winter storm and had dinner at Hecho en Dumbo followed by drinks at The Wren before having to get home to our babysitter.

We had a lazy Sunday morning and enjoyed family breakfast and snuck out to enjoy the sunny weather and run some errands before making a pitstop at the park for the little munchkin to play on the swings. We enjoyed a really nice dinner at home since it was really a "Saturday"....I took full advantage of having time and made eggplant rollatini, which was really good. That said, I'm not sure it's worth the effort to do the eggplant and would just stick with the risotto since that was so yummy :) I followed the recipe except let the eggplant sit for almost 2 hours based on a technique we learned at the cooking school we attended in Italy. If I had had more time I would probably have let the eggplant sit even longer. The other tweak I made was I topped the eggplant with shredded mozzarella instead of parmesan cheese. The dish was really delicious and we paired it with B Side cabernet sauvignon - we're trying new wines every week and this was a keeper.
