Blizzard 2015 and an easy fajita recipe

The highly anticipated blizzard arrived Monday afternoon and most offices and businesses closed early. It was a real treat having Tyler home early, especially since I hadn't seen him in a week! We both got emails from work saying that our offices were closed for Tuesday (like most of the city) so we stocked up on groceries and hunkered down. Tyler and I took turns "booking the conference room" aka our bedroom to take our work calls and ate well. We both had lunch meetings so I needed to make something quick and easy; the fajitas came out great and was perfect for a snowy day! 

Ingredients
  • 1 packaged boneless chicken tenders cut into small cubes
  • Trader Joe's frozen peppers and onions
  • 1 package taco seasoning
  • Tortillas
  • 1 jar Trader Joe's Cowboy Caviar Corn and Black Bean Salsa
  • Shredded cheese
  • Sour cream
Directions
  1. In a large frying pan, cook the chicken pieces all the way through.
  2. Add the Trader Joe's peppers and onions and cook until the veggies are defrosted. 
  3. Add the package of taco seasoning and cook according to the instructions.
  4. Assemble your fajitas with all the fixings!
