The highly anticipated blizzard arrived Monday afternoon and most offices and businesses closed early. It was a real treat having Tyler home early, especially since I hadn't seen him in a week! We both got emails from work saying that our offices were closed for Tuesday (like most of the city) so we stocked up on groceries and hunkered down. Tyler and I took turns "booking the conference room" aka our bedroom to take our work calls and ate well. We both had lunch meetings so I needed to make something quick and easy; the fajitas came out great and was perfect for a snowy day!
Ingredients
- 1 packaged boneless chicken tenders cut into small cubes
- Trader Joe's frozen peppers and onions
- 1 package taco seasoning
- Tortillas
- 1 jar Trader Joe's Cowboy Caviar Corn and Black Bean Salsa
- Shredded cheese
- Sour cream
Directions
- In a large frying pan, cook the chicken pieces all the way through.
- Add the Trader Joe's peppers and onions and cook until the veggies are defrosted.
- Add the package of taco seasoning and cook according to the instructions.
- Assemble your fajitas with all the fixings!
