I spent last weekend up in Maine taking care of a few things around the house and made sure to leave plenty of time for outlet shopping to take advantage of all the Columbus Day sales!

I drove back early on Sunday so I had time to catch up before the week begun. I did have time to make this DELICIOUS soup. I saw this recipe and modified it quite a bit. The changes I made were 1) I used two bags of spinach instead of Kale 2) I only did one can of crushed tomatoes and instead added 56 oz. of low sodium chicken broth and used non-fat milk 3) I chopped and added 1 small, red onion and 1 small, yellow onion and 4) I added 2.5 cups of tortellini.
