Saturday and Sunday, we had a very lazy days and got caught up on all kinds of things :) We did a major spring cleaning and filled 3+ trash bags of clothes to donate. We also managed to have a few delicious meals at home (see recipes below). All in all, it was a nice and relaxing weekend!
Sage Brown Butter and Sausage Pasta
This pasta dish was seriously soooooo good and got rave reviews from the hubby!
Ingredients
- 1 lb. of ground sweet sausage
- 7 tablespoons of butter (I know...kind of a lot, but seriously worth it!)
- 8-10 leaves of fresh sage
- 3/4 box of Gemelli pasta
- 1 cup parmesan cheese
Directions
- Brown sausage with 1 tablespoon of butter.
- While sausage is cooking, begin cooking the pasta.
- Remove sausage and fat from pan. Place sausage in a small bow and leave to the side.
- Melt remaining 6 tablespoons of butter and whisk constantly until the butter begins to brown.
- Add the sage leaves to the butter and continue to whisk for another 2-3 minutes.
- Drain the pasta and then place back in the pot.
- Add the sausage to the pot, pour the butter and sage mixture over the pasta, and add 1 cup of parmesan cheese. Mix until everything is combined.
Chicken, Mozzarella, Roasted Red Pepper, and Pesto Panini
Directions
- Broil the bread with a drizzle of olive oil for a few minutes while the chicken is cooking.
- Assemble the sandwich with the remaining ingredients and place it back in the oven for 5 minutes or until the mozzarella cheese is slightly melted. Enjoy!
