Dinner in 15 minutes!


Dinner tonight took 15 minutes and was very healthy....Seriously! The menu included a garden salad, whole wheat couscous with cucumbers and feta, and pan seared tilapia. The meal was very flavorful and rather healthy...not to mention it only took 15 minutes to prepare :)

Pan Seared Tilapia with Feta and Cucumber Whole Wheat Couscous 

Ingredients
  • 1 lb. of tilapia
  • 1 lemon
  • 1 cup of couscous cooked to packaged directions
  • 3 oz. of crumbled feta
  • 1/3 cucumber sliced into small pieces
  • Salt, pepper, and paprika to taste 
  • 1/2 tablespoon of olive oil
Directions
  1. Cook couscous according to packaged directions. Once cooked, add feta cheese and cucumbers and 1 squeeze of lemon.
  2. Heat olive oil in medium frying pan on medium-high heat. Season tilapia with salt, pepper and paprika on both sides. 
  3. Cook tilapia about 4-5 minutes on each side (keep watch as it can sometimes cook faster). Once cooked, squeeze half a lemon on top before serving.
