While we were up in Andes visiting my uncles, we went out to eat at one of three the restaurants in the area and I had ordered Chicken Cordon Bleu. The dish was enormous and the chicken was fried (not what I expected). So, I decided to try and make my own lighter version of the dish this week.

Ingredients
- Chicken cutlets
- 2-3 slices of honey roasted ham
- 2 pieces of Swiss cheese folded in half
- 1 tablespoon of Italian breadcrumbs
- Salt and pepper to taste
- Preheat oven to 400 degrees. Spray rimmed baking sheet with non-stick cooking spray.
- Place the chicken cutlet on the baking sheet and stuff with ham and cheese. Sprinkle salt and pepper as well as bread crumbs.
- Bake in the oven for 15-20 minutes or until chicken is cooked all the way through.
