Happy Thanksgiving!!!

We headed to upstate New York in the Catskills to visit my Uncle and his partner for Thanksgiving. We've been looking forward to coming up here all fall as John and Scott opened the most adorable bakery in town called Two Old Tarts, which is where Thanksgiving was hosted this year! "The Tarts" (aka my Uncles) did an amazing job getting the bakery up and running and it was so fun for us to see it all put together as we saw it just before they had moved into the space.

*I was in charge of making my Mom's signature cranberry apricot sauce, creamy mashed potatoes, and sweet potatoes. Here are the recipes all of which were easy and delicious :)


Cranberry Apricot Sauce
 (yields about 3 cups of sauce)

Ingredients:
  • 1/2 cup thinly sliced dried apricots (about 3 oz.)
  • 1/4 cup of sherry or orange juice (we do half sherry, half orange juice)
  • 3/4 cup water
  • 2/3 cup of sugar
  • 1/4 cup of honey
  • 1 12 oz. package of fresh or frozen cranberries
 Directions
  1. Combine apricots with sherry or orange juice in a small bowl. Ideally, let the mixture sit for 8 hours; however, the minimum amount of time is 3 hours.
  2. Combine water and sugar in a medium saucepan and bring to a boil. 
  3. Add apricot mixture, honey, and cranberries. Cook over medium heat for about 8 minutes or until the mixture thickens. 
  4. Spoon mixture into a boil, cover, and let cool in a refrigerator.

 
Easy Sweet Potatoes

Ingredients
  • 1 bag of sweet potatoes (6-8 potatoes)
  • 4 tablespoons of melted butter
  • 1/4 granulated sugar
  • 1 tablespoon of cinnamon
Directions
  1. Preheat oven to 350 degrees and dice potatoes into small pieces. Mix sugar and cinnamon together.
  2. Spread potatoes out on baking sheet and drizzle butter over potatoes. Sprinkle cinnamon and sugar mixture over potatoes.
  3. Bake for about 35 minutes or until potatoes are softened.
