Today was our first cool, fall day here in NYC and to send off the warm weather, I thought I'd make a summer dish. So, tonight, I made Pesto Mozzarella and Roasted Red Pepper Turkey Burgers with salad and a cream corn side dish. The turkey burgers were really good and turned out to be a great substitute :)

- Pesto sauce
- Ball of Mozzarella cheese
- Ground turkey meat
- Jar of roasted red peppers
- Focaccia bread (instead of buns)
- Preheat your oven on the Broiler setting. Cook the burgers until they are almost all the way cooked (about 10 minutes).
- Take the burgers out, spread the pesto on the burger. Layer the roasted red pepper and a thick slice of mozzarella cheese on top.
- Cook the burgers until the cheese melts (about 2-3 minutes). I ate mine without a bun and I served Tyler's with focaccia bread.
