Simple Baked Salmon with Roasted Vegetables


Our Easter was really low key and we both just wanted to be home. Instead of going out to dinner, we decided to eat at home. We passed on lunch for a big and early dinner so I made a simple baked salmon with roasted green beans and peppers with a side of cheese raviolis. This was really easy to make and very tasty! The best part was the vegetables and salmon cooked at the same temperature and for almost the same amount of time…My kind of dinner!
 
 Simple Baked Salmon
Ingredients
  • 1 lb. salmon
  • 4 tablespoons of butter
  • Salt and pepper to taste
  • 1 teaspoon fresh parsley

Directions
1.     Preheat oven to 475 degrees.
2.     Place the 4 tablespoons of butter on a rimmed baking sheet and melt the butter in the oven. Be careful not to overcook the butter; you just want it to melt.
3.     Remove the baking sheet from the oven and place the piece of salmon skin side down on top of the butter. Season the salmon with salt and pepper and then place the baking sheet back in the oven.
4.     Bake salmon for approximately 15-20 minutes or until the salmon is flaky.

Roasted Green Beans and Red Peppers
Ingredients
  •  Green beans (cook as much as you would like)
  • Red Pepper (cook as much as you would like)
  • ½ tablespoon of olive oil
  • Salt and pepper to taste

Directions
1.     Preheat oven to 475 degrees.
2.     Prepare green beans and red peppers. I remove the ends of the green beans and the seeds and stems from the peppers. Cut the peppers in half.
3.     Spread the green beans on a baking sheet in one layer. Place the red peppers with the insides facing down.
4.     Drizzle olive oil and salt and pepper over the vegetables.
5.     Place baking sheet in the oven and cook for approximately 15 minutes. At the half way point, remove the pan from the oven and flip the peppers and green beans to ensure the vegetables get roasted on both sides.
