No Rest for the Weary!

This week was an exceptionally busy week for me at work, hence why I haven't blogged since last weekend! Despite being bogged down at work, I did get a few great in during the week: Creamy Basil Pesto Pasta and BBQ Chicken Stuffed Sweet Potatoes (see recipe below). The pesto was a healthier version of traditional basil pesto (less oil and no pine nuts) and was really delicious. I think it's going to be my new basil recipe since it tastes good and is a lot healthier than regular pesto. The sweet potato dish was heaven....It's not the healthiest recipe in the world, but it sure is tasty! My taste-tester (aka Tyler) approved both recipes and thought the sweet potatoes were one of his favorite dishes I've made :)

This weekend also proved to be busy. We had two very dear friends in town from California and spent the weekend eating! Tyler and I grabbed drinks in Nolita before meeting up with Samer and Maire Camille for dinner at Lombardi's Pizza. Lombardi's is an old establishment and claims to be "the birthplace for New York style pizza." The pizza and caesar salad were really good and it was a fun place to try. Here's all of us outside of the restaurant.
After dinner, we ventured to Chelsea for drinks. We attempted to head up to the bar at the top of The Standard Hotel for the great views; however, it was closed for a private party for fashion week. We ended up heading to The Tippler below Chelsea Market for some delicious drinks :)

Saturday, Tyler spent the day doing school work and I met with a friend to work on some nonprofit work. We then headed to Samer and Maire Camille's hotel for a drink before heading to dinner at Maya, an upscale, trendy Mexican restaurant. We met Maire Camille's friend and her husband for dinner....the food was really phenomenal and some of the best Mexican food I've had in New York. We all highly recommend going there...If you do, definitely get a pitcher of Sangria and the enchiladas. You won't be sorry!

Sunday, we spent the day lounging and getting caught up on everything else. I made these delicious Mediterranean wraps for lunch...so easy and really good!
 All I did was take a whole wheat pita wrap, spread hummus over it, sprinkle with feta cheese, and added onion, red peppers, cucumber, lettuce and chicken. So filling and relatively healthy! I spent the afternoon with a close friend from college, which was such a treat :) Tonight, were hanging out, enjoying baked parmesan chicken and watching the Grammy's...perfect end to a great weekend!

BBQ Chicken Stuffed Sweet Potatoes
*Adapted from this recipe for 2-3 people

Ingredients

  • 3 sweet potatoes
  • 2 medium sized chicken breasts
  • 1/4-1/2 cup BBQ sauce
  • 1 red onion
  • 2/3 cup cheddar cheese
  • Olive oil

Directions

  1. Preheat oven to 400 degrees. Slice sweet potatoes lengthwise and put them face down on a baking sheet. Bake for about 40 minutes or until the potatoes are soft.
  2. In a medium saucepan, boil water and cook the chicken breasts. Once cooked, shred the chicken into small pieces.
  3. As the potatoes and chicken are cooking, thinly slice the red onion and cook on medium with a little bit of olive oil and salt and pepper until the pieces are caramelized. Remove from stove and place in a bowl.
  4. Remove the potatoes from the oven and scoop out the insides into another small bowl. Mix the sweet potato with the cheddar cheese. Place the potato skins back on the sheet, drizzle olive oil and salt and pepper over them and bake for 5 mins.
  5. Shred the chicken and place in the bowl with the caramelized onions. Pour in BBQ sauce and mix.
  6. Once potato skins are crisp, add the potato cheddar mix and top with the BBQ chicken and onion mix. Serve warm.
