Relaxing Friday

Tyler and I flew home yesterday and were exhausted when we woke up this morning. So, we decided to stay in, clean up our Christmas decorations, go through our mail, watch lots of TV, and read our new magazines that came...Sounds like my ideal Friday night :) As far as food goes, I saw this easy recipe for BBQ Chicken Pizzas and thought I'd give it a try (I modified it a bit...see below for the modified recipe). They came out so delicious and are a much healthier version for pizza. Here's how to make it:

  • Whole wheat pitas
  • Small Red Onion
  • BBQ Sauce (I used a light version)
  • Shredded cheddar cheese
  • Rotisserie chicken (I bought a pre-made BBQ chicken at the store)
  1. Preheat the oven to 400 degrees.
  2. Place pitas on a baking sheet. Shred the chicken into small pieces. Slice half of a small red onion into small pieces.
  3. Spread 2 tablespoons of BBQ sauce on each pita bread.
  4. Place a handful of chicken on pita and spread out.
  5. Sprinkle 1/4 of a cup (or more if you like your pizza really cheesy) over the pita. Place pieces of red onion on top.
  6. Bake for 6-8 minutes or until cheese is melted and pita is slightly crispy.
