I really love using my cast iron pan and enjoy trying new recipes with it. I decided I would try and make dinner using only the cast iron pan and see how it turned out. This was super simple and I just used what I had in my cabinets/freezer. The meal was hearty and tasted really good!
Ingredients
- 1 tablespoon olive oil
- I had 3 bone in with skin chicken breasts in the freezer (so I thawed those and used them)
- 3 to 4 cloves garlic , minced
- 1 cup brown rice (I think wild rice would taste really good with this)
- 1-1/2 cups chicken broth
- 1 can of artichoke hearts
- 1 teaspoon Mrs. Dash Italian seasoning
Directions
- Preheat oven to 425 degrees.
- Heat olive oil in a cast iron skillet. Add chicken breasts and cook for 4 minutes per side over medium-high heat.
- Remove chicken from skillet and set aside.
- Add garlic to the skillet and stir for 10 to 15 seconds and then stir in the rice for about 30 seconds. Be careful not to let the rice burn.
- Place the chicken breasts over rice and then pour the chicken broth into the skillet.
- Arrange artichoke hearts around the pan. Season the chicken breasts with the Italian seasoning.
- Cover the skillet with aluminum foil and then place the skillet in the oven.
- Cook for 25-30 minutes, or until liquid is absorbed.
- Remove foil and continue to cook for 5 more minutes.
- Remove from oven and serve.
