Relaxing Weekend in NYC

Per usual, I'm behind on blog posts! We've been trying to eat a bit more healthy and eat more veggies, which has required a bit of planning! Here are some quick and relatively healthy meals:
1. Seared Scallops - In a hot pan, ad 1 tablespoon of olive oil and 1 table spoon of butter. Pat dry the scallops and season them with salt and pepper. Sear the scallops for about 1.5 minutes per side.

2. Sliced peaches, burrata and balsamic glaze salad.

3. Broiled turkey burgers with pesto, roasted red peppers, and sliced mozzarella. Cook the turkey burger to your liking, with 2 minutes to go, spread a teaspoon of pesto on the burger and layer it with roasted red peppers and a slice of mozzarella.

4. Blackened Salmon with Peach Avocado Salad - this is one of our favorites!
We spent both weekend mornings in the park enjoying coffee and listening to the piano man.
And we've been enjoying some cocktails on our roof :)
