Life Lately

We hit the ground running when we returned from Maui....We managed to get our Christmas tree and decorate our apartment, which is my favorite activity! We've been working quite a bit to wrap everything up for the year, but have managed to hang out, cook great meals, go out with friends, and do some craft projects (just me, not Tyler!). Here are some pictures from our adventures :)
Brunch at the Jane - the food was so good. The sent out the below dessert as Sir Kensington's is served there. It's always nice going out to eat with Josh ;)

We sent out our Christmas cards and have been checking our mailbox daily for our friends cards. We love getting them and hang them up on a wall in our kitchen :) 


I just finished knitting this blanket for my colleague's new baby. It was a fun project to take with me on all my travel this fall....that said, I was happy when it was over!
No surprise, we LOVE Raffetto's pasta and have our weekly Sunday night meal from there. We mixed things up this week to try their homemade spaghetti, pancetta, alfredo sauce and pees. Delicious!

I haven't done a ton of cooking, but I did make this really good chicken in a creamy parmesan sauce with pasta and broccoli, which Tyler absolutely loved....we didn't have any leftovers!

Ingredients
  • 1 tablespoon of olive oil
  • 1 small onion diced
  • 1 red pepper diced
  • 1 tablespoon garlic
  • 1 lb. chicken tenders 
  • 1/4 cup dry champagne or white wine (I usually use white wine, but was out, so I used some leftover champagne from the night before)
  • 3/4 cup chicken broth
  • 2/3 cup of parmesan cheese
  • 1/2 cup heavy cream
Directions
  1. Heat olive oil in a medium pan and cook the diced onion and red pepper and garlic. Transfer to a plate.
  2. Add chicken to the pan and cook until lightly brown and cooked all the way through.
  3. Remove chicken from the pan and deglaze it with the champagne. Next add the chicken broth, parmesan cheese, and heavy cream. Bring to a boil and then reduce heat to a simmer; the sauce should begin to thicken. 
  4. Mix all of the veggies and chicken in the sauce. You can serve over pasta or by itself.
