Baked Salmon with Parmesan Orzo

Last week, I made this Parmesan Basil Orzo dish with breaded salmon and was in heaven! Both recipes were extremely easy and perfect for a week night dinner!

Breaded Salmon

Ingredients
  • 1 salmon filet
  • 1/3 cup Italian bread crumbs
  • 3/4 cup panko bread crumbs
  • 1 tablespoon butter
Directions
  1. Preheat oven to 425 degrees and cover baking pan with foil.
  2. Mix Italian bread crumbs and panko in a small bowl.
  3. Place salmon on baking pan (skin side down) and slice butter into small pieces. Place pats of butter on filet (spread out).
  4. Pour bread crumb mixture over filet and press bread crumbs into salmon to stick. Bake for 20 minutes and serve with orzo.
